How precious is Felsbarsch? It's pretty freakin 'delicious, especially when cooked properly. Here are some of my favorite recipes for cooking striped bass. Enjoy!
Roasted Striped Bass
1 / 2 cup fresh bread crumbs
1 / 2 cup chopped fresh parsley
2 tablespoons fresh chives, finely chopped
1 tbsp. Minced fresh thyme
2 tbsp. Minced fresh basil
Salt and pepper
4 Mid-cut pieces Felsbarsch (each 1 / 2 pounds and about 1 1 / 2 inchesthick)
2 tbsp. Olive
Preheat oven to 350 degrees. In a small bowl, stir to taste bread crumbs, herbs, salt and pepper. Place the fish pieces on waxed paper. With your hands, generously rub the oil on both sides of the fish. Sprinkle the bread crumbs and herb mixture evenly over the fish, then pat it so that it holds. Place the fish on a cake rack in a roasting pan. Roast until the fish just flakes, 10 to 15 minutes. To crisp the top, turn the oven to broil and placethe fish under the broiler for about 2 minutes. Transfer to a serving dish and serve immediately. Note: This can be prepared 4 hours ahead through step 3 (except for preheating the oven) and cooled.
Spanish Style Striped Bass
2 lbs. Striped bass fillets, sliced and served in portions 2 tomatoes, medium size, cut into thin slices 1 / 2 cup green bell pepper, chopped 1 cucumber, small, thinly sliced 1 / 2 cup onion, chopped 1 clove garlic sliced finely chopped 2 tbsp. Butter orMargarine 2 tbsp. Parsley 1 tbsp. White wine 2 tbsp. Lemon juice 1 / 2 tsp. Marjoram
Prepare Felsbarsch fish fillets, cut fillets in half removing the dark meat in the dark lateral line runs through the center of the loop. Also remove any dark meat on the side of the loop that the skin and had along the abdomen. Cut trimmed fillets into portions and served in a greased baking pan. Arrange tomato and cucumber slices on the fish. In a saucepan, cookOnion, green pepper and garlic in butter onion is soft but not brown. Remove from heat and stir in parsley, wine, lemon juice and marjoram. Spoon sauce over the fish. Bake in preheated oven at 375 ¡F for 20 to 25 starts minutes or until fish easily with a fork to flake.
South Carolina Striped Bass
Ingredients:
2 Striped Bass Fillets
1 cup white flour
All purpose flour 1 cup
2 cups buttermilk
Lemon pepper toTaste
Directions:
1. Preheat oil in deep fryer or Dutch oven over medium heat.
2. Cut bass into nuggets in a bowl with buttermilk and let it react,
(refrigerated) for at least four hours.
3. Drain buttermilk, but do not rinse fish.
4. Combine cornmeal and flour in a zip top plastic bag.
5. Add fish pieces into the flour mixture a few at a time, shaking bag to coat a regular basis. 6. Remove fish nuggets and carefully place in hot oil. 7. Fry for3-5 minutes or until golden brown. 8. Remove from oil, drain and season with lemon pepper.
