Bajan Fish Cakes

Food Affairs of Barbados is proud to have recently caused an event Sandalo, the expensive beach equipped luxury villa of John Hawkins and Stephanie possession, located in Berkshire, England. Guests of honor were British Prime Minister Tony Blair and his wife Cherie and family from Barbados their family holiday destination for the last four years. The relaxed setting with a moonlit pool overlooking the sea, accompanied by the gentle sounds of live entertainmentprovided the perfect backdrop for this casually elegant affair.

Among the delicacies served were our Bajan Fish Cakes, popular all over the island, and a big hit with Sandalo. These fish cakes are easy to prepare and perfect for a sumptuous dinner or a social football party. Try it with our homemade remoulade Bajan

Ingredients:

1 cup onion, finely chopped

1 cup red pepper, finely chopped

½ cup whole kernel corn, drained

½ cup greenOnions, chives or chopped

1 Scotch bonnet pepper, seeds removed and diced or 1 tbsp Bajan pepper sauce

1 cup flour, sifted

1 tablespoon baking powder

Salt and pepper to taste

2 tablespoons melted butter

2 tablespoons oil plus oil for frying

1 egg, lightly beaten

½ cup milk

1 pounds salted cod, cooked and flaked

Directions:

Enjoy salted cod fish in water for at least 4 hours, preferably overnight, changing water at least threeTimes.

a heavy skillet, heat oil in saute the onions and peppers and cook until soft. Set aside. Mix the flour, baking powder and salt and pepper in a bowl. Make a well in the center and pour egg, milk and butter and mix lightly. Fold in cooked onions, peppers, hot peppers, corn, chives and fish. Batter should be thick and slightly lumpy. If the dough is too watery, add sifted flour to achieve the desired consistency.

In a large deep pan orFryer, heat cooking oil to a temperature of 340 degrees F. Drop dough from spoon into hot oil, but not mass. Cook until they are golden brown and drain on paper towels. Fish cakes can be kept warm in a 250 degree F oven until ready to serve. Serve with tartar or Bajan Sweet Chili Dip.

Chef's Note: Dip the spoon into the hot oil to coat each time dough to prevent sticking to the spoon.

Bajan Tartar Sauce

½ cup wholeMayonnaise

2 tablespoons mustard

2 tablespoons drained sweet taste

1 tablespoon finely chopped parsley

1 tablespoon finely chopped onion

Bajan pepper sauce to taste

Pinch of sugar

Salt and pepper to taste

Place all ingredients in a bowl and chill at least an hour before serving.
