This recipe for salsa is one of my favorites for many reasons. It is easy to do and takes no time to put together. It does not cost very much at all and I usually have most ingredients on hand. When planning for a party you can a day or two in advance, and it's actually better to do so. Just do not make too far in advance, or the temptation to eat it before you all get-together is too big!
Ingredients:
2 large cans diced tomatoes
2 Long HotPeppers
2 Cloves garlic
1 / 2 onion (white, yellow, red, or combo)
1 / 2 bunch coriander
Lime Juice
Black pepper
Preparation:
Char the skin of peppers by over a flame on the stove. You will hear clicking sounds and the skin is black. Once the entire pepper is black, in Ziploc bag for a few minutes. The bag will be on steam and make it easier to solve for the skin. Once cooled, rinse the pepper in the sink. This makes it easy to remove theSkin. Split the pepper to remove seeds (if you can it as very sharp in this case, leave some or all of the seeds). In a food processor, blender mix all ingredients and pour into a medium to large bowl. Lime juice and pepper to taste. Let salsa for at least an hour before serving so that all the flavors come together to sit refrigerated.
Notes:
You can use different peppers if you like mild or spicy taste. I think to have the long hot peppersgreat taste with just enough kick for most people.
You can simply cut the whole recipe in half for a simple dinner or double size or even triple the recipe for a large group.
I typically mix all ingredients until smooth, but you can use it as chunky as you like.
Jazz to the recipe even more, you can add black beans and corn. Add a few tablespoons of salsa diced mango, papaya, pineapple and a sweet and spicy fruit salsa. AlsoBest way to a big pile and then Jazz have three separate parts and salsas. Most people will think you made them separately, and spent a lot of time in the kitchen! Experiment with other flavors are endless and the possibilities.
