Ingredients:
8 egg yolks
04:03 cup sugar
3 1 / 2 tablespoonsWater
Serves 6 espresso short
2 1 / 4 tablespoons Amaretto
1 1 / 4 cup sweet cream
20 ounces mascarpone
20 oz Biscotti
3 tablespoons cocoa
Preparation:
Use an electric mixer on high speed, beat egg yolks in a large bowl until they become thick.
In the meantime, give the water and sugar in a small saucepan. Stir over low heat the mixture to a boil.
Insert a candy thermometer and continue to cook until the temperature reaches250 degrees F.
While the egg yolk mix, are poured into the sugar syrup. Continue to mix until the mixture became light yellow and fluffy. Set aside.
Mix the espresso and Amaretto give in a bowl. Stir well and set aside.
Beat the cream until stiff, until it forms stiff. Set aside.
Place the mascarpone in a large bowl, whisk until smooth. Fold in the egg yolk mixture. Use a rubber spatula until blended mix.
Fold in the cream type and mix until smooth.
Dunk the biscottis in the espresso andTransfer to a glass bowl with a flat bottom and high sides, until the cookies are fully covered the bottom of the bowl.
Now pour in the cheese mixture until it reaches a third of the height of the basin. Sprinkle 1 tablespoon of cocoa on top.
Top with another layer of espresso soaked-biscottis. Pour in the cheese mixture until it reaches about two thirds of the bowl. Sprinkle 1 tablespoon cocoa back at the top.
Add the last layer of espresso soaked-biscottis. Top with the remaining cheeseMixture.
Chill for 3 hours in the fridge.
Before serving, sprinkle the remaining chocolate on top.
