Cook Time: ~ 1 hour, 10 minutes
Yield: Feeds ~ 8 people with 1 / 2 each sweet potato
Ingredients:
4 large yams
1 / 4 cupButter
~ 2 tablespoons vegetable oil - canola oil, please.
1 / 3 cup brown sugar
1 / 2 cup maple syrup - Do not use table syrup!
~ 4.3 bag marshmallows - you can large or small marshmallows.
Sea Salt - Light irrigation after taste
Ground black pepper - Light sprinkling to taste
Instructions:
1. Preheat oven to 350 F (same temperature to cook your Turkey: http://CookingWithKimberly.com/?p=106)
2. Peel sweet potatoes and cut in halfLongitudinal direction.
3. Grease with ~ 1 / 2 tablespoons vegetable oil a large baking pan (~ 12 "x 17"), sweet potatoes and coat with remaining vegetable oil, season lightly and sprinkle with sea salt and pepper.
* Tip: If you are a large can of yams, skip to Step 5 #, because the yarns used are already fork tender.
4. Arrange yams in baking dish, flat side up, in oven for about 1 hour before Turkey will do, and roast uncovered for 40-45 minutes or until fork tender.
5.Remove baking dish with butter and pour dot, maple syrup, and sprinkle with brown sugar evenly over top of yams and return to oven for ~ 10 min.
6. Take off again, baste with liquid in the pan and evenly sprinkle marshmallows on and return to oven to melt and brown min marshmallows, ~ 8.
7. Serve and enjoy!
These sweet potatoes are a family favorite, for sure! This is a recipe handed down from mother to my husband and the southern grandmother! I do not know how farThis recipe goes back, but it certainly is a real winner!
