Italian salad of tomato and sweet onion with Roquefort dressing

Basic Italian Dressing

Green Shallots

Roquefort cheese

Dried oregano

Salt

Pepper

Slice ripe red tomatoes and sweet onions very thin. Fourth place tomato slices on each plate. Over the top of the tomato was the onionSlices. Drizzle over the top Basic Italian dressing. Place the two green onions along the edge of the plate. Crumble the Roquefort cheese spread over the top with dried oregano. Season with salt and pepper.

Basic Italian Dressing

6 tablespoons extra virgin olive oil

1 clove garlic, crushed

2 tablespoons red wine vinegar

1 teaspoon salt

1 teaspoon freshly ground pepper

Place all salad dressing ingredients given in a small bowl. Whisk together with a whisk untilmixed well.
