How Lobster, Puerto Nuevo Style

What is Puerto Nuevo? Puerto Nuevo is a seaside village in Baja California, Mexico. It was made famous for its succulent Pacific lobster, which is known in Southern California about 50 years ago. Back in the old days, local fishermen would go up and down the coast in their PanGas (fishing boats) and dive right off the rocks to find the best lobster.

The traditional Puerto Nuevo lobster is deep fried in lard. You are the fat in the pan, so that theThe lobster meat remains tender and juicy. A good 'ol Mexican beer or some ice cold Coca-Cola is a must for this dish. Of course, do not forget the beans, rice, Spanish, limes, salsas, and flour and / or corn tortillas.

You can always throw the lobsters on the grill or under the grill if you do not want to fry it. You can also cook with a little water with a little beer, Mexican, preferably mixed.
Ingredients

Servings: Makes 6Portions.

* 6 large Mexican lobsters

* 2 cups lard or solid vegetable shortening

* Old Bay Seasoning

* Pepper

* 2 cups frijoles (beans)

* 2 cups rice Spanish

* Or two dozen of flour and / or corn tortillas

* 2 cups Salsa Fresca

* 2 cups Salsa Verde

PREPARATION

1st Bring a pot of water mixed with a little Mexican beer, bring to a boil. Throw in a bit of Old Bay seasoning.

2nd Place the lobsters in about 3 minutes. You will notbe well cooked.

3rd Heat lard or vegetable shortening, deep in a frying pan.

4th Split the lobster in half length wise and remove the green tamale inside.

5th Season the lobster halves with Old Bay seasoning and pepper.

6th Roast lobster each half for about 5 minutes on each side, until meat is tender and crisp.

7th Drain on paper towels.

8th You can serve immediately or in a warm oven until ready to serve

Serve your Puerto NuevoLobster with frijoles, rice, tortillas, salsas and lime. You can eat the lobster either in one or Taco Burrito or only use them by themselves to shovel the tortillas and wipe beans, rice, pan juices and excess Salsas - Mexican style!
