The following are some simple camping recipe's that my Mom used to make us. You can be prepared some of the vegetables, then save in Ziploc bags. Just try to plan ahead to make things easier for you and do not forget it with the rest of the pack camping gear. Good planning is essential, and will make mealtimes less stressful on the kids.
Mom's Fried Potatoes
Ingredients:
½ lb bacon
1 medium onion, peeled andchopped
1 green bell pepper, chopped
6-8 medium russet or Idaho potatoes
8 oz pkg sharp cheddar cheese
Salt and pepper to taste
Method:
You need a campfire or grill grate over an open fire. Place pan on the grill. Immediately even bacon was in the frying pan makes it crispy. Remove the bacon to drain on a paper towel. Hobo Dinners
This recipe is for 4 people, double the ingredients for more servings.
Ingredients:
Heavy-Foil
1 pounds lean ground beef into four patties made
1 medium onion, chopped
5-6 potatoes, washed, cut, may (on skin)
5-6 raw carrots, washed, cut, may (on skin)
Salt and pepper to taste.
Method:
Place 4 pieces of foil on counter or table. Should be about 18 in x18 in or big enough to every dinner.
Place ground beef patty in the center of each foil piece. Sprinkle about two tablespoons of onion on each patty. Add the equivalent of a potato and a carrot, you can get more vegetables, if desired. Salt and pepper to taste. Fold foil together then fold down firmly on food, then back at each end forming a pocket. Throw on hot coals or place in a preheated oven 300 degrees for about an hour. To test for doneness, you can pocket PierceFork should, if the vegetables you give your cooking a meal no resistance to be ready. You can eat directly from the bag. Leftovers are already packed.
