Cranberry, Brown Sugar, and Cinnamon Glazed Sweet Potatoes

Here is a great recipe for a delicious holiday style casserole with sweet potatoes, cranberries and cinnamon. A little bit of bourbon and brown sugar add a nice tang, and a touch of cayenne pepper adds a little bite. Roasted potatoes are soft, brushed a mixture of bourbon and butter, combined with cranberries, cranberry sauce highlighted one with brown sugar, cinnamon, and cayenne, and baked until golden brown.

Serve hot withYour favorite holiday meal, or as a nice side dish for any time of year.

Cranberry, Brown Sugar, Sweet Potatoes and Cinnamon Glazed

Ingredients:

4 pounds sweet potatoes, peeled and sliced crosswise 4.1 "thick
1 cup cold water
4 tablespoons butter, melted
2 tablespoons bourbon
Coarse salt
Freshly ground black pepper
04:03 cup fresh cranberries
03:01 cup brown sugar
1.8 teaspoon cayenne pepper
1.8 tspCinnamon

Preparation:

1st Preheat oven to 350 F.

2nd Butter a large glass casserole form.

3rd Place potatoes in concentric circles, in baking dish, slightly overlapping slices.

4th Add ½ cup water to the dish. Cover baking dish with foil.

5th Bake 30 minutes or until the potatoes soft.

6th Remove dish from the oven.

7th Increase oven temperature to 425 F.

8th Add melted butter and bourbon to give small bowl.

9th Spoon or brush mixture overPotatoes.

10th Season with salt and pepper.

11th Bake 25 minutes. Baste halfway with the remaining bourbon mixture.

12th While the potatoes cook more, add cranberries, give ½ cup water and brown sugar in saucepan.

13th Bring to a gentle start to burst boil over high heat until cranberries.

14th Drain and reserve excess liquid.

15th Stir in cayenne pepper and cinnamon cranberry mixture Reserved.

16th Cranberry Spoon liquid overtop.

17th Bake 20 more minutes.

18th Spoon cranberries on top near the end of baking.

19th Serve hot.
