Since spring is finally here, a sort of (it snowed here in Denver on Easter day, sigh), I thought I would share one of my favorite strawberry recipes with you. It is a fairly simple recipe that even requires no baking. Start to finish, it takes about 20 minutes. When I bake my site not to, I will share with you here the story behind the recipe.
Strawberry Cream Cheese Pie
Strawberries are my favorite fruit. I always have them around when they comein the season in the spring. It always brings back memories of going to get berries with my family in summer. We would all taste it in the car with buckets and ice bucket, eager, fresh berries in the summer crowd. We would be one of the nearby Berry farms, acres and acres of berries had to go. I remember it seemed so huge to me as a child and I could not believe how many rows were in rows on rows. All of us kids, of course, ended up eating as many berries as we picked up. It isanything that just has so much taste like a strawberry from the field, fresh, warm with sunshine. Makes Me Want to hunt a local Berry Farm website so that I can share this memory with my daughter!
1 package (8 ounces) strawberry cream cheese1 package (3.4 ounces) vanilla pudding 2 cups cold milk
1 (6 ounce) ready-to-use Graham cracker pie crust
1 pint strawberries
Prepare the vanilla pudding according to directions on the package. (Place the pudding mix and milk ina bowl and whisk together for 2 minutes.) Let it set for 5 minutes. I usually use this time to start washing and trim the strawberries. I typically cut in half for this recipe. Once the custard has set, the cream cheese in a medium bowl, place and mix with an electric mixer for 30 seconds at low speed. Add the pudding to the cream cheese and mix for about a minute long on low speed. Put the mixture into the pie crust and put it in the fridge for 10 minutes.Continue washing and cutting the strawberries, while the cake in the fridge. Place the strawberries on the cake. Store any leftovers in the fridge.
