ROASTED SWEET POTATO SANDWICH
When I was in college, made the small cafe that was on campus this beautiful Yam sandwiches, which I chewed at least twice a week, if not more. Ingredients:
2 medium sweet potatoes, sliced lengthwise
2 tablespoons olive oil
1 tablespoon honey
Juice of ½ lemon
Pinch of cayenne pepper
Pinch of salt, pepper and red chili flakes
Sambal (see on the ethnic food aisle). How much or as little as you want.
4 tablespoons goat cheese (more or less as desired)
10 cilantro leaves per sandwich
Soft baguette into 6-inch lengths andhalved
Directions
Preheat the oven to 400 degrees. Cut the bottom of the sweet potato so you have a flat surface to cut on. Cut the sweet potatoes lengthwise into ¼ "thick pieces of skin.
