Fried shrimp with sweet and sour sauce with Thai herbs

Fried shrimp with sweet and sour sauce with Thai herbs and mint, served on a thin pancake tip coconut. It is one of the first "East meets West" recipes I created in Saint Tropez. The lukewarm appetizer was always very successful in serving the guest. Definitely one of my favorite "East meets West" dishes. It is easy to do, except maybe for the top pancakes, which needs a little experience. The sauce can be stored for days in the refrigerator,much longer if stored in a freezer. Pancakes can be booked in advance and packed in plastic bags in the freezer. If you find the preparation of the top pancake too difficult, but skip the shrimp and serve in individual salad bowls, without the pancakes. (You can find kaffir lime leaves, lemongrass and coconut milk in Chinese stores)

Serves 4

12 large shrimp, peeled and heads removed

Ingredients for theSauce

1cup white wine vinegar 1 / 2 cup water 1 1 / 2 cups granulated sugar 3 / 4 cup finely chopped shallots 1 / 2 cup finely spring onions 1 / 4 cup chopped very finely chopped lemon grass sticks 6-8 kaffir lime leaves, cut into very thin julienne 4 coriander stalks, chopped 5 stalks fresh mint, cut into julienne

Make the sauce first:

1 - All the ingredients except the spring onions, coriander and mint in aSaucepan.

2 cups brown sugar
1 1 / 2 lbs sweet potato
2 limes
1 cinnamon stick
1 cup cream
1 teaspoon salt
3 egg yolks
1 tablespoon butter
1 tablespoon vanilla extract
1 / 8 teaspoon ground cinnamon or grated cinnamon stick
Water, as needed
How to do it:

Peel and chop the sweet potato and cover it with water in a frying pan. Add a teaspoon of salt and cook for 20 minutes or until tender. Leave the potato and mash itwith a fork, blender or food processor.

Peel the limes and save the fruit for another use. Place the dish in a large pot with the brown sugar, cinnamon stick, and two cups of water. Cook the mixture over medium heat until it reaches 250 degrees F, stirring it all the time. You need a candy thermometer to measure the temperature.

Remove the peel and cinnamon and turn the heat down to low. Add the mashed sweet potatoes and stir the mixture until it is smooth.Take it off the heat. The cream, butter, egg yolk and a pinch of salt until smooth and add it on the sweet potato mixture.

But I'm from Southern California and we do things with the "usual" ingredients, and give them a little twist! This dish was born when my sister was a Weight Watcher. It has always been our host Thanksgiving potlucks and I'm always responsible for "Tuber BRIGADE" recipes for our crowd. Many do not want to spoil your Thanksgiving, I came up with this very tastylow fat casserole that is necessary to become our holiday celebration as my potatoes and cauliflower Mashers.

Candied orange dipped in chocolate - Sweet Memories, Sweet Tradition

Nana made orange every year. Dishes of sweet treats appeared on Thanksgiving and Christmas dinner table. In fact, the holidays would not be the same without this sweet. After Nana died, my older daughter was the tradition until she died two years ago. She was the mother of our only grandchildren - twins - and life is different without them.

Christmas was my daughter's favorite time of year. My granddaughter loves it too, and sets theTree the day after Thanksgiving. "Grandma, we can make candied orange peel?" She asked.

I had the candy before, but had trouble finding the recipe. Finally, I reached for a reliable text Nana's "The Boston Cooking School Cook Book". Candied orange peel was added to the index, and when I turned on the page, it was covered with pale orange drips. Yes, Nana had "been there" and made the countless recipeTimes.

Preparation time: 25 minutes + marinate 30 minutes
Total cooking time: 20 minutes

Ingredients for Sweet and sour pork recipe:

500 g (1 lb) pork tenderloin, cut into thick slices
2 tablespoons cornstarch
1 tablespoon sherry
1 tablespoon soy sauce
1 tablespoon sugar

1 large onion, thinly sliced
1 green pepper, diced
2 small carrots, cut into thin slices
1 small Lebanese cucumber, seeded andchopped
5 spring onions, cut into short pieces
440 g (14 oz) can drained pineapple chunks in natural juice, juice reserved
1 / 4 cup (60ml / 2 fluid ounces.) White wine vinegar
1 / 2 teaspoon salt

Directions for sweet and sour pork recipe:

This sweet and sour chicken wings are delicious for holiday gatherings.

3 pounds uncooked chicken wing sections or Wingett

1 cup cornstarch

3 eggs, lightly beaten

Oil for frying

1 / 2 cup sugar

1 / 2 cup vinegar

1 / 2 cup currant jelly

1 / 4 cup soy sauce

3 tablespoons ketchup

2 tablespoons lemon juice

Directions

Preheat oven to 350 degrees.

Place cornstarch in a large resealable plastic bag.Drop in chicken wings, a few at a time. Shake wings in bag to coat evenly. Dip the wings in the eggs.

Heat a frying pan or electric fryer to 357 degrees. Fry chicken wings for 8 minutes or until golden brown, juices should run clear. Turn wings occasionally while cooking. Drain on paper towels.

In a small saucepan, combine sugar, vinegar, jelly, soy sauce, ketchup and lemon juice. Bring to a boil. reduce heat and let simmer, uncovered, for 10 minutes.

Place chickenWings in a greased 15x10x1-inch baking pan.

Half of the sauce over wings. Bake uncovered for 15 minutes. Turn wings over and sprinkle on the remaining sauce. Bake another 10 to 15 minutes or until the meat juice is clear and the coating is set.

Makes 30 wings.
