Yams and sweet potatoes have more families a Thanksgiving favorite for most of all in front of the South! But I'm from Southern California and we do things with the "usual" ingredients, and give them a little twist! This dish was born when my sister was a Weight Watcher. It has always been our host Thanksgiving potlucks and I'm always responsible for "Tuber BRIGADE" recipes for our crowd. Many do not want to spoil your Thanksgiving, I came up with this very tastylow fat casserole that is necessary to become our holiday celebration as my potatoes and cauliflower Mashers.
The amounts are included adjustable crowd you fit, I have always valued about 4-6 ounces sweet potatoes or yams per person. Because of all the fruit, you find yourself eating less of the shell. It is not only full of vitamin A and potassium, but high in fiber as well!
Preheat your oven to 400 Spray a 2-1/2 liter casserole dish with butter-flavor Pam and placeaside.
have prepared for two pounds of potatoes:
1 large can sliced peaches in syrup
1 C each of prunes and dried apricots, up for 30 minutes in warm orange or pineapple juice (put simply put fruit in a saucepan and cover with the juice, simmer for up to one and then turn off the heat) flopped
1 C fresh cranberries, frozen or fresh (frozen defrost if using)
1 to 1-1/2 tsp cinnamon
1 teaspoon ground ginger
kosher salt and pepper
2 tablespoons margarine lite
1 / 2 Ctoasted and chopped pecans
Some options are always nice and plump up dried pears, dried apples, and even a different texture of the same fruit dried peaches. Remember, even chubby them with the plums and apricots as well.
Scrub and dry potatoes. Bake on a baking sheet about 40 minutes or about 3 / 4 's the way roasted. Cool for 10 minutes. Peel and cut in food is not too much thicker than the peach slices and prunes.
Combine the potatoes with thePeaches, syrup from peaches, plums, in order to taste the juice, cranberries, cinnamon, ginger, salt and pepper. Combine well.
Dot with margarine. Bake for about 15 minutes or until the potatoes are finished baking. Top with toasted and chopped pecans. Serve.
