HOT RELISH

12 hot peppers
12 greenTomatoes
12 cups of red and / or green peppers
12 bulbs
3 cups sugar
3 teaspoons salt
2 cups cider vinegar
Grind vegetables. (In today's modern kitchen, this can be done with a food processor.) Run place in a large sieve and water over the mixture for 5 minutes.
Bring add the sugar, vinegar and salt to a boil in a pot. Place the vegetable mixture in a large saucepan or soup pot. Pour the boiling sugar mixture over the vegetables. Cook over medium heatuntil very hot but not to a hard boil, stirring occasionally. Place in pint jars, canning lids and fasten tightly. Be sure to seal jars (you should make a popping noise and / or the center of the lid is easy to indent.)
Makes 6 liters.
CARROT AND RELISH Sweet Onion
2 sweet onions, chopped
2 carrots, chopped
1 teaspoon fresh rosemary, chopped
1 bay leaf
1 / 3 cup cider vinegar
1 / 3 cup water
combine in a medium bowl with a lid, allthe ingredients and stir well. Put the lid on the bowl. Refrigerator taste at least overnight. Before serving, remove the bay leaf and drain the fluid.
